
I feel strange about writing an entire blog post about this dish because it is so simple! However, this is my #1 ranking post on Instagram so you guys must really like something about this combination. I recommend the use of an Instant Pot to get your chicken perfectly shreddable. Here are the insanely simple details on recreating this dish…
Instant Pot Shredded Buffalo Chicken
Served over quartered avocado
Ingredients:
– 2 lbs frozen chicken (I use tenderloins, but breasts would be fine too)
– 1 1/2 cups of sugar free chicken stock or bone broth
– 1 tsp minced garlic
– 1/4 tsp salt (more/less to taste)
– pepper to taste
– two ripe avocados, peeled, pit removed and quartered
– 1/2 red onion, chopped
– Paleo Buffalo sauce of your choice, my favorite brand is listed below.
In your Instant Pot, combine the chicken stock and minced garlic; give it a quick stir. Add frozen chicken to the pot. Sprinkle half of the salt and pepper on top, give the frozen chicken pieces a stir, sprinkle the rest of the salt and pepper. Keep in mind that we’ll be largely flavoring the chicken with the buffalo sauce later.
Close and lock the Instant Pot lid; set it to 20 minutes, cooking on the ‘high’ setting. I usually do the quick release when cooking is complete.
Remove chicken from the Instant Pot, place in a bowl and shred with two forks. Add 1/4 cup of buffalo sauce and the chopped onions, mix well.
Lay avocado quarters lined up on a plate as shown in the photo and pile the shredded chicken in the middle, drizzle with a bit more buffalo sauce and you’re done! This is a wonderfully nutritionally dense meal that couldn’t be simpler. I usually add a side of fried plantains to this dish. More on plantains some other day, they are a favorite in my house!
