
Vertical…food?! Deliciously deconstructed, piled high burgers, delectable bite sized stacks that look as good as they taste; food that goes…up…more than out. I’ve realized one of the things I love about ‘vertical’ food’ is the opportunity to combine some many different flavors and textures.
This dish was incredible; zesty shrimp balanced with cool guacamole, a bit of crunch and more flavor from the onions and the crisp zucchini base. I’m getting hungry just writing this post! I will make these again soon.

Shrimp and Avocado Zucchini Bites
Ingredients:
- approx. 1 lb of shrimp
- large whole avocado, mashed
– garlic powder
- minced red onion (for garnish)
- chopped cilantro (for garnish)
Spice mix for the shrimp:
- garlic powder
- smoked paprika
- chili powder
- cumin
- salt
- pepper
(Mix this up! I totally eyeballed this one…using more of the spices of my preference)
Cook shrimp however you prefer – or use precooked shrimp for ease! Cool shrimp, blot dry, set aside in a medium bowl.
Slice zucchini in 1/4” rounds. Set aside
Mash avocado in a bowl – I like to mix in a bit of garlic powder and a tiny bit of salt.
Make your spice mix – whisk together in a small bowl. Sprinkle the seasoning mix on shrimp while tossing lightly to coat. Use as much or as little as you like! I prefer some kick, so I usually use a lot of the seasoning and go heavier on the chili powder.
Top each zucchini round with avocado and two seasoned shrimp. Garnish each with minced red onions and cilantro.
