
An absolute match made in heaven.
I eat clean. I haven’t always but I sure as heck do now. I’ve been mostly palo since October 2019; let’s just say that I’m a believer in clean eating! More on that later…
Every once in a while I need – NEED – something hearty and substantial. Comfort food – hearty, filling, and absolutely delicious. Enter the Sweet Potato waffle with a fried egg. This simple and nutritious dish made my hungry heart sing.
Sweet potato waffle topped with fried egg
(Makes 2-3 depending on size of sweet potato)
Sweet potato waffle:
- One shredded sweet potato
- One egg
- Salt & Pepper to taste
(seriously, that’s all folks!)
Turn waffle iron to the high setting. Preheat to get that sucker nice and hot.
Peel one sweet potato and shred. I used a hand grater, but I you can also use food processor with a shredding disc.
Whisk egg, salt and pepper in a medium bowl.
Mix in shredded sweet potato – mix well to coat potato in egg mixture.
Take a scoop of the mixture and press into the waffle iron. Make sure you spread the mixture evenly on the iron as the sweet potato shreds won’t ‘spread’ on their own. Close the iron and be patient. These waffles take a hot minute to cook. When you see the steam begin to dissipate, the waffle is just about done. Look for a nice golden crust. I used a silicone spatula to remove the waffle.
Top with an over easy egg and you’re set. I had this for breakfast, but it would make a rockin’ lunch or dinner! Who else LOVES breakfast for dinner?!
*notes* If making for company or serving to multiple people at once, I recommend making waffles ahead. Make your waffles and cool them. Store in the fridge and toast in a toaster oven on a medium/high setting when ready to serve. I can fit 4 waffles in my toaster oven at a time. While the waffles are toasting, I fry up the over easy eggs.
